Brown Rice Triscuit Chicken recipe

IMG_1327I’m an anomaly; I’m a single man that cooks every meal for himself.  I keep a very healthy diet but most of the time I’m only cooking for myself.  Because of my diet I eat a lot of chicken and not many carbohydrates unless they are in veggies and beans.  However lately I have been trying to reintroduce carbs into my diet.

I’ve never been much of a cracker eater except for on thanksgiving with cheese (how can you resist that).  So I picked up a box of the new Triscuit Brown Rice baked with Red Bean Roasted Red Pepper and began quoting Billy Madison almost immediately (you know the delicious Triscuit cracker scene).  After a few it was dinnertime and I was preparing my chicken when I had a moment of inspiration…Why not use the triscuits to bread the chicken?  This idea paid off in dividends.  Here is the recipe for one (I am still a single guy):

INGREDIENTS

  • 1 Chicken Breast (4-6oz)
  • 6 Roasted Red Pepper Triscuits
  • Salt & Pepper to taste

DIRECTIONS

Salt and Pepper the chicken to taste.  Blend Triscuits into a fine crumb (in blender or food processor).  Coat Chicken in Triscuit crumbs.  Then bake chicken at 350 for 20 minutes.
