A couple of weeks ago I had the pleasure of being part of an intimate cooking demonstration/lesson with Chef Gordon Maybury of the Ironwood Grill at PGA National Resort and Spa in Palm Beach Gardens, FL. I’ll be bringing you his wonderful recipes for summer. The entire lesson included 4 dishes all done in 45 minutes. All easy to recreate at home.
He put this together in MINUTES and it was the BEST Gazpacho that I’ve ever had. I was going to make it for our 4th of July celebration but my brother is planning that portion of the menu, so we’ll see if I can convince him….
GAZPACHO
Ingredients
1 ea Cucumber, peeled, de-seeded, diced
3 ea Tomato, de-seeded, diced
1 Red Pepper, de-seeded, diced
1 pc white bread – chopped
2 Garlic cloves – chopped
2 ea Green Onion – chopped
1 cup Juice Tomato
1 cup Stock
2oz White Distilled Vinegar
2 0z Olive oil
Salt & Pepper
Tabasco Sauce
Worcestershire Sauce
Procedure
Mix all diced ingredients in a container.
Add tomato juice, stock and all seasonings.
Marinate over night.
Put in blender and puree till smooth.
Of course, it’s much easier to simply take a ride over to the Ironwood Grill in PGA National Resort and Spa for a WONDERFUL dinner. It’s on my list of favorite restaurants in Palm Beach County.
