Don’t you find that when you start exercising you automatically just fall into eating better? I do. Perhaps it’s just the fact that I’ve worked at something that’s HARD to do and I don’t want to UNDO it by diving head first into my two besties Ben and Jerry. Since I’ve been using my Total Gym, I’ve made some modifications in my diet.
My big issue is my sweet tooth. I learned this recipe from Chef Gordon Maybury at the PGA National Resort and Spa. He didn’t make this one for me when I visited, but when I looked him up online, I found this FABULOUS recipe that satisfies my sweet tooth and allows me to eat a lot healthier. I’ve been making it for dessert lately and thought I’d share it with you.
Tropical Fruit Salad Saffron Vanilla Yogurt
Feeds 10 (great for a summer get together)
Watermelon – 1 cup
Cantaloupe – 1 cup
Pineapple – 1 cup
Honeydew – 1 cup
Mango – 1 cup
Peel all fruit above and dice into small ½” cubes. Place in bowl
Strawberries – 1 cup
Blueberries – 1 cup
Cut strawberries in quarters and add to diced fruit, add blueberries in whole.
4 cups Greek yogurt
1 vanilla bean
Pinch of saffron
Add all ingredients into bowl and whisk to combine
Fold yogurt into fruits and stir till all fruit is coated.
Serve in bowl with mint leaf garnish
I’m working out intermittently (the downside of all of this travel), but I feel better knowing that I’m doing SOMETHING to help me get stronger and healthier. One of the things about the Total Gym is that it’s so EASY to use and because I understand my limitations, I do just what is right for my body. So far I’ve found that I’m not overdoing it and because one of my goals has been to learn to stretch my body.
